Invoice’s Sandwich Palace – Edible Nashville

The Instagram description for Invoice’s Sandwich Palace reads: Sandwiches, Snacks, and Shenanigans. Fact. With 10 years because the sous chef at Metropolis Home and a brief stint together with his personal restaurant, chef Aaron Clemins is making sandwiches now and couldn’t be happier.

In 2018, Aaron and spouse, Christen, have been at a crossroads. They’d opened the bold Kuchnia & Keller in Germantown in a 25,000-foot house. “I labored daily for 13 months and barely noticed my spouse. We have been roommates and that was about it.” Time for a reset. The couple closed the restaurant and headed to San Diego for a 9-month sabbatical. They returned to Nashville in 2019 with no plan. Aaron reached out to associates and located himself at TKO with Ryan Bernhardt. After a 12 months, he went to work at Rosie Meals & Wine in Hendersonville, and simply 3 weeks later discovered himself with no job like so many different cooks on the town.

Again at TKO, Bernhardt had closed his doorways however was busier than he had ever been. Aaron went again to TKO to assist, and as soon as April got here and went, they determined they wanted a longer-term plan. Ryan had a full kitchen and many unused house simply sitting there. So, Aaron determined to do a sandwich store on the weekends. It suited the set-up (a tiny little walk-in fridge) and his schedule—he would do sandwiches simply on the weekends at lunch. And TKO doesn’t serve lunch. “Mainly, Invoice’s Sandwich Palace matches within the cracks.”

Why Sandwiches? Cooks love sandwiches. And fellow cooks Ryan and Aaron Distler (of Mr. Aarons Items) are each from Evansville, Indiana, which has a powerful sandwich tradition (who knew). Some of the in style is Stromboli, not the Italian Stromboli, however like a “pizza on a sandwich. It consists of floor meat and cheese. It’s like in case you took garlic bread, put some meat fillings in between, wrapped it in foil and baked it,” says Aaron.  It’s large in Evansville and the cooks discovered themselves speaking about sandwiches on a regular basis.
